Two bakers, one stone oven, and a building nobody wanted.
Nora and Wes Calloway have been feeding Larkspur out of a folding table at the Saturday market since spring. Two hundred loaves, sold out by nine, every single week. That is the whole business plan, honestly. People kept asking where the shop was.
Nora came up through restaurant kitchens and spent eleven years starting her day at three in the morning. Wes ran the front of house and did the math that finally made this possible. Between them they have one rule: bake less, bake it better, and stop when it is gone.

The building
123 Main Street, since 1911.
It was a hardware store for most of a century, then a carpet showroom, then nothing at all for six years. When we pulled the false wall down we found three arched windows looking straight onto the square, and a pressed tin ceiling under two coats of beige.

The timeline
From an empty room to bread at 7 AM.

Step 1 · October
We signed the lease
Twelve hundred square feet on Main Street, empty since the hardware store closed. Tin ceiling still up there under two coats of paint.
Step 2 · January
Build out started
Floors up, plumbing in, the old front counter saved and stripped back to the walnut underneath.
Step 3 · March
The oven arrives
A four deck stone oven, craned in through the front window. Test bakes start the week it is wired.
Step 4 · Spring
Doors open
Bread at 7 AM, pastry right behind it, coffee going all morning. Come say hello.

On the square in Larkspur.
Close enough to walk to from most of town. These are the places our market customers come from, and where the delivery run will start.
